Pumpkin Cookies
1 cup butter
3 cups sugar
2 eggs
2 Tbsp. vanilla
1 (15 oz.) can pumpkin filling
5 cups flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg (yes, we grate our own nutmeg....makes a HUGE difference)
- Mix first 5 ingredients in mixer
- Combine dry ingredients in a separate bowl
- Mix wet and dry ingredients in mixer
- Drop by rounded spoonfuls on ungreased cookie sheet (I put on parchment paper)
- Bake at 350 degrees for 15 minutes
- Cool on rack and frost when cool
Frosting
In mixer blend until smooth:
8 oz. cream cheese, softened
2 Tbsp. milk
1 stick softened butter
2 Tbsp. vanilla
5 cups powdered sugar
*Makes about 4 dozen cookies*
